Not recommended for red wine or people that are\nsulfite sensitive testing for allergens Read more When testing foods for\nsulfite content, such as wine, it is important to realize that the sulfite\npresent can be either free or “bound.” The strip detects free sulfite only,\nthe pH needs to be adjusted to 12 to get an accurate reading for total\nsulfites (free plus combined). Please read instructions below BEFORE ORDERING\nif you intend to use it for testing red wine or something for total sulfites.\nInstructions: Immerse the test strip into the solution and swirl 3 times.\nRemove the strip and compare to the color chart after 15 seconds. NOT\nrecommended for red wine (color pigments in the wine cause interference with\nthe strip). NOT recommended for people with a sulfite sensitivity \/ allergy to\ntest for allergens (the strips are not sensitive enough to detect the low\nlevel of free sulfites). Supplemental instructions to use this test for red wine or total\nsulfites Sulfites in wine and almost anything else are present in both free\nand complexed or “bound” forms. This strip is designed to test free sulfites\n(Sulfur Dioxide) but with some adjustments can test both forms. The foods\nrequire labeling of food as “containing sulfites” if the level exceeds 10 ppm.\nThis requirement is referring to total sulfite (free and combined). The\nBartovation Free Sulfite Test Strip can be utilized for testing total\nsulfites, but special preparation of your solution is required. Before we go\ninto detail on this, we believe it is important for you to understand how this\ntest actually tests your solution. The sulfite test pad contains buffer salts\nthat when moistened will soak up sulfur dioxide (what they mean by sulfites in\nwine) and convert it to sulfite that then reacts with the indicator. The\nbuffer agents on the test pad convert the free sulfur dioxide to sulfite ions\nwhich then react with the dye indicator. This leads to the development of\ncolor proportional to the amount of free sulfur dioxide (sulfite) present.\nThis is highly effective for testing free sulfites in any solution. If the\nsolution is not highly alkaline, it will not detect complexed sulfites. This\nis why when you test a wine, which is acidic and usually has a pH between 2.8\nand 4.4 you get such a small reaction. When testing Chardonnay white wine for\nexample, you have a total sulfite level around 150 PPM, but free sulfite is\naround 15 PPM. A common ratio of free sulfite to bound sulfite in wines is\nusually around 1 to 10. As a result you will see a very small reaction if any,\neven if the item is labeled as “contains sulfites”. With the strip alone, the\nother 135 PPM of bound sulfite would not be detectable. As a result, the\nsulfite bound to the other components must be disintegrated to become free\nsulfites before the strip will detect them. We would recommend the following\nprocedure: Adjust the wine sample to pH 12 with sodium hydroxide solution\n(confirm the pH with pH test strips).Dip test strip, following the\ninstructions on the label and after about 30 seconds compare with color chart.\nThe concentrated sodium hydroxide or any other very alkaline material should\nbe handled similar to concentrated bleach with the appropriate safety\nprecautions. In addition to these steps that must be taken to test total\nsulfur dioxide, steps must be taken to test red wine for free or total\nsulfites. One of the most common issues users have when using our strips to\ntest a red wine is the pigments of the red wine get affixed to the test pad\nand distort the reading, making it very difficult to determine the pH. An\nalternative method for testing red wine involves liberating the free sulfite\npresent by adding approximately 1 teaspoon of citric acid to a 1 ounce sample\nof red wine in a small cup. Holding the Sulfite test strip above the solution\nfor 5 minutes will result in the test strip reading the free sulfite level.\nThe citric acid will cause free sulfites in the wine to convert to sulfur\ndioxide gas. The gas will react with the test strip. That will test for free\nsulfites only in the wine sample.
